Chili Con Carne

A satisfying one dish dinner. Serve with soft tortillas, nachos, avocado slices and cheddar cheese.
serves 6

1kg mince beef 1/2 tbsp salt
1 can kidney beans 1 tbsp tomato soup powder
i can sweet corn 12 soft tacos
2 cans chopped tomatoes  
1 large onion, chopped for the toppings: (optional)
1 tbls olive oil 150g sharp cheddar cheese, grated
3 cloves garlic, finely chopped 1 large bag tortilla chips
1 tbsp ground cumin ripe avocado, pitted and sliced
1/2 tbsp hot chili powder*  

In a large saucepan, heat olive oil. Add chopped onion and garlic and brown lightly.

Add mince beef to onion and cook through, about 10 minutes.

Reduce heat and stir in chopped tomatoes, kidney beans, and sweet corn. Stir until combined. Dissolve tomato soup powder in 1 cup of boiling water and add to chili.

Stir in cumin, chili powder and salt. Simmer for 30-45 minutes.

Serve with soft tacos and your choice of toppings.

*add more chili powder if you like it really spicy or substitute 1 whole chopped fresh chili and saute with onion and garlic.
