makes 12 cookies
| 3/4 cups pecans | |
| 1/2 cup unsalted butter at room temperature | |
| 1 cup all purpose flour | |
| 1/3 cup sugar | |
| 1 tsp vanilla extract | |
| 1/8 tsp salt |
Preheat oven to 350°.
Toast pecans on a baking sheet for about 6 minutes. Once cooled, chop into fine pieces.
Cream butter and sugar for about 1 minute with an electic mixer until light. Mix in vanilla, salt and flour until combined and dough comes together. Fold in chopped pecans.
Divide dough into 12 peices and shap into balls. Roll in sugar until coated and place on baking sheet, 3" apart. Using the bottom of a glss, slightly flatten the cookies and sprikle with sugar.
Bake for about 7 minutes. Sprinkle with more sugar, rotate cookie sheet and bake for another 7-8 minutes until golden brown. Cool on wire rack.
