Rustic Apple Pie

Nothing tastes better than hot apple pie. This pie as much of a delight to prepare as it is to eat!

| 7 cups apples |
1 egg white, slightly beaten |
| 2 tablespoons lemon juice | 1 tablespoon butter |
| 1/4 cup all purpose flour | roughly chopped walnuts (optional) |
| 1/4 cup packed brown sugar | |
| 1 & 1/2 teaspoon ground cinnamon | |
| 1/2 package or 1 sheet puff pastry | |
Preheat oven to 350 degrees.
Combine apples and lemon juice in a mixing bowl. Mix together flour, brown sugar & cinnamon. Add to the apple mixture and toss to coat. Set aside.
Roll out puff pastry (if not already a sheet) into a 14 inch square (or enough to overlap the sides of your dish). Gently ease the pastry over the dish, pressing pastry to sides of dish and leaving the remaining pastry to hang over the edges.
Brush bottom with egg white and transfer apple mixture into pastry lined dish. Dot with butter. Fold edges of pastry over apples toward centre, partially covering fruit.
Bake for 50 - 55 minutes or until pastry is golden brown and apples are tender
