Honey Mustard Chicken
Honey Mustard Chicken
If you like chicken, this is a recipe you should surely try. The chicken is just so succulent and full of flavour. I like making extra for the next day and putting the tender chicken pieces in a sandwich or whole wheat roll with mayonnaise, lettuce and tomatoes, it’s absolutely delicious.

Serves 4
4 skinned and de boned chicken breasts
For the Dressing:
4 table spoons whole grain mustard
2 table spoons good quality honey (I like Acacia Marks and Spencer honey)
2 tablespoons Worchestershire sauce

Mix all the dressing ingredients together. 

If Chicken pieces are thick, you can slice them in half lengthwise; otherwise place each piece in a plastic bag and pound with a mallet.  This makes the pieces slightly thinner and more tender.

Place chicken in an airtight container and pour dressing over chicken.  Mix well, so that all chicken pieces are coated with dressing.  Cover container and refrigerate overnight or a minimum of 1 hour. 

Preheat oven to 400˚F. 

Place the chicken pieces right on a grill or on a shallow baking dish.  Do not throw away any dressing remaining in container.

 Cook for 15 minutes and turn over and coat with extra dressing. Cook for another 15 minutes, or until cooked through.

Serve with vegetables, rosemary roast potatoes or couscous and green salad.
